aloha breakfast scramble

I first had a Spam breakfast while visiting the big island of Hawaii in Hilo at a little hideaway place. Rice and Spam go hand in hand. We love our Spam and rice breakfasts - it takes almost no time to put together and the ingredients are ridiculously simple.

Ingredients For aloha breakfast scramble

  • 3 c
    rice
  • 2 Tbsp
    butter
  • 1/2
    onion, rough chopped
  • 1
    zucchini (cubed)
  • 1/2 tsp
    minced garlic
  • 1/2 tsp
    garlic salt
  • 1 can
    spam, cubed (i used black pepper spam, see note)
  • 4
    eggs, scrambled
  • salt and pepper to taste

How To Make aloha breakfast scramble

    Rinse rice under cold water. I use a microwave rice cooker and it works like a charm. Follow instructions to make 3 cups rice. Keep set aside until ready to plate.

    Melt butter in a large skillet. Add onions and garlic. Cook just until soft (3-5 minutes).

    Add cubed zucchini, season with salt, pepper and little garlic salt. Saute on medium-low heat until soft (about 8 minutes).

    Add diced spam to the skilled and stir until browning a little, maybe 4-5 minutes more. Remove all to a large bowl.

    In the same skillet, scramble eggs.

    Plate: Spoon rice onto place, top with spam/zucchini, then scrambled eggs.

    *NOTE: Today I used Black Pepper Spam. In the past I have also used Hickory Spam and Jalapeno Spam. I understand there is a Bacon Spam now that could be very interesting. **NOTE: If you have a little cubed pineapple that would be divine in there too!
