As a child one of my friends was Prudy Hoerter. Every time Prudy and I had a sleepover, Mr. Hoerter would get up early on Sunday and make us breakfast. He always made German pancakes not the Dutch Baby type but true Bavarian pancakes

Ingredients

  • 2 large
    apples peeled cored and sliced
  • 1/4 c
    sugar
  • 1/4 c
    cinnamon
  • 1 Tbsp
    nutmeg
  • 1 c
    milk
  • BATTER

  • 1 1/2 c
    all purpose flour
  • 3 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 Tbsp
    sugar
  • 1 1/4 c
    milk or buttermilk
  • 1 large
    egg
  • 3 Tbsp
    butter, melted

How to Make Prudy's Dad's German Pancakes

Step-by-Step

  1. Soak the apples in the milk for 10 minutes.
  2. Mix sugar, cinnamon and nutmeg in a shallow bowl. Drain the apple slices and dredge them in the cinnamon/sugar mixture
  3. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  4. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Place coated apple ring in the batter as the pancake cooks. When bubbles appear flip and cook until golden brown. You can hold these in the oven at 275*F until you finish cooking all the pancakes
  6. Serve hot with butter and more of the cinnamon sugar mixture.
