As a child one of my friends was Prudy Hoerter. Every time Prudy and I had a sleepover, Mr. Hoerter would get up early on Sunday and make us breakfast. He always made German pancakes not the Dutch Baby type but true Bavarian pancakes

Ingredients

2 large
apples peeled cored and sliced
1/4 c
sugar
1/4 c
cinnamon
1 Tbsp
nutmeg
1 c
milk

BATTER

1 1/2 c
all purpose flour
3 1/2 tsp
baking powder
1 tsp
salt
1 Tbsp
sugar
1 1/4 c
milk or buttermilk
1 large
egg
3 Tbsp
butter, melted

How to Make Prudy's Dad's German Pancakes

Step-by-Step

  • 1Soak the apples in the milk for 10 minutes.
  • 2Mix sugar, cinnamon and nutmeg in a shallow bowl. Drain the apple slices and dredge them in the cinnamon/sugar mixture
  • 3In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  • 4Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  • 5Place coated apple ring in the batter as the pancake cooks. When bubbles appear flip and cook until golden brown. You can hold these in the oven at 275*F until you finish cooking all the pancakes
  • 6Serve hot with butter and more of the cinnamon sugar mixture.
