I had corn meal pancakes at IHOP and since then have wanted to try them at home. This recipe creates a light fluffy pancake that has a nice texture and flavor. Enjoy! From my kitchen to yours.

If you don't have buttermilk, use regular plus 2 teaspoons of cider vinegar.

How to Make Mel's Cornmeal Mix Pancakes

Step-by-Step

  1. Mix ingredients, add extra milk/water as needed to thin the mixture to your liking.
  2. Oil skillet and adjust to low-medium heat. Pour out pancakes add allow to brown lightly on each side.
  3. Serve with butter, syrup or powdered sugar.
