I love Blueberry pancakes but I don't like the big thick rugs overloaded with blueberries. I like them thinner, more of a crepe style with fewer blueberries in the mix and the blueberry juice infused into the batter.

Ingredients

  • 2/3 cup krusteaz buttermild pancake mix
  • 2/3 cup water
  • 1/s cup blueberries, frozen or fresh

How To Make blueberry pancake breakfast at the lake

  • Step 1
    I use frozen blueberries a lot of time. They are available any time and fresh are not always or are too expensive. Either way I like to microwave the blueberries until they just start to juice and soften the blueberries. This makes the mix purple but the purple is where the flavor is! So I get a blueberry flavor with every bite.
  • Step 2
    In a bowl add the mix and water, stir briefly not too much a few lumps are fine. Add blueberries and stir briefly. Spoon out onto hot griddle. you can add more fresh blueberries if you like just before spooning out or just after into the pancake itself.
