Ingredients For baked cranberry pancake

  • 6 slice
    bacon
  • 3
    eggs, beaten
  • 2 c
    milk
  • 1 c
    flour
  • 1 tsp
    salt
  • 2 tsp
    sugar
  • 1/4 c
    dried sweetened cranberries, chopped

How To Make baked cranberry pancake

    Preheat oven to 425 degrees. Place bacon in a 13x9-inch cake pan and bake while mixing other ingredients. Bacon does not have to be cooked all the way. In mixing bowl, mix eggs, milk, flour, salt and sugar together. Just until blended. Mix in cranberries. Pour over bacon and bake for 20-25 minutes. Serve warm. Makes 4 servings.
