pumpkin spice baked oatmeal with raisins
This is another variation on a basic baked oatmeal recipe that used applesauce. I swapped 1/2 a Cup of the oats for some Bisquick-- it gives it a better texture-- you can just pick up a square and eat it by hand. Great warm or cold-- filling, healthy, budget friendly and nutritious.

Ingredients
- WET INGREDIENTS
- 1 tablespoon cooking oil-- i use melted coconut oil to be healthier
- 3/4 cup canned solid pack pumpkin
- 1 cup milk
- 2 - eggs
- 1 teaspoon vanilla extract
- DRY INGREDIENTS
- 2 1/2 cups old fashioned oats
- 1/2 cup bisquick mix
- 3/4 cup packed brown sugar
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon ground cinnamon
- 2 teaspoons baking powder
- 2-3 dashes salt (enhances the sweetness)
- 1/2 cup raisins

Step 1Preheat your oven to 350 degrees

Step 2Grease a 13"x9" pan

Step 3In a small bowl-- combine all your WET ingredients

Step 4In a larger bowl-- combine all your DRY ingredients-- breaking up the brown sugar and raisins to incorporate well

Step 5Add the WET ingredients to the DRY ingredients-- stir until well incorporated

Step 6Pour mixture into your prepared pan

Step 7Bake @ 350 degrees for 30 minutes-- until the center looks dry
