peanut butter banana oat breakfast cookies

A great time saver when you are on the go and don't have time to make breakfast. These are great with a scoop of ice cream for desert too. They are the result of me experimenting with my basic oatmeal cookie recipe as I had ingredients on hand. I have recently eliminated the butter entirely from this recipe and it comes out great, just stir in the flour VERY well so the mix is even. To make them even healthier you could add protein powder, switch to whole wheat flour, add wheat germ, etc.

Ingredients

  • 2-4 - over ripe bananas
  • 1 cup brown sugar, lightly packed
  • 1/2 cup white sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon cinnamon
  • 2 - eggs
  • 2 teaspoons vanilla
  • 1 1/2 cups flour
  • 2 1/4 cups rolled oats
  • 1 cup jiff chunky peanut butter

How To Make peanut butter banana oat breakfast cookies

  • Step 1
    Preheat oven to 375 Mash bananas in a large bowl. Cream in butter, sugar, eggs and vanilla
  • Step 2
    Add cinnamon, baking powder and baking soda. Fold in peanut butter. Once mixture is evenly textured, fold in oats. Add flour and stir by hand.
  • Step 3
    Drop tablespoon sized amounts of dough about an inch apart on baking sheets, flatten them somewhat as these will not spread on their own though they will rise some and bake 8-10 minuets or until edges are golden. Cool for 2 minuets on sheet before transferring to racks.
