1 lbchorizo (mexican sausage, mild or medium)
1-2medium chopped onion
3-4seeded and diced roma tomatoes
4-6corn tortillas cut into 1/4 inch strips

How to Make Migas
- chop the onions, and jalapenos. chop and seed the tomatoes. set aside.
- cut the corn tortillas into 1/4 inch strips, and fry them in the olive oil to crispy and drain on a paper towel
- cook the chorizo. add the onions, tomatoes, and jalapenos. scramble the eggs in a bowl and add them to the chorizo. stir in the tortilla strips and a cup of cheese.
- warm the flour tortillas in the microwave. place 1/3 cup of the mixture on the tortilla, sprinkle with remaining cheese, and roll up. serve with salsa or pico de gallo and enjoy
