This is a traditional Southwest breakfast I got from the owner/cook of what in yesteryear would have been called a 'greasy spoon',but it is yummy and only one of two ways I'll eat eggs. Enjoy and let me know what you think.

Ingredients

  • 8 - beaten eggs
  • 1 pound chorizo (mexican sausage, mild or medium)
  • 1-2 - medium chopped onion
  • 2-3 - chopped jalapenos
  • 3-4 - seeded and diced roma tomatoes
  • 4-6 - corn tortillas cut into 1/4 inch strips
  • 6-8 - flour tortillas
  • 3 tablespoons olive oil
  • 3-4 cups mexican blend shredded cheese

How To Make migas

  • Step 1
    chop the onions, and jalapenos. chop and seed the tomatoes. set aside.
  • Step 2
    cut the corn tortillas into 1/4 inch strips, and fry them in the olive oil to crispy and drain on a paper towel
  • Step 3
    cook the chorizo. add the onions, tomatoes, and jalapenos. scramble the eggs in a bowl and add them to the chorizo. stir in the tortilla strips and a cup of cheese.
  • Step 4
    warm the flour tortillas in the microwave. place 1/3 cup of the mixture on the tortilla, sprinkle with remaining cheese, and roll up. serve with salsa or pico de gallo and enjoy
