  • 3 c
    grated cheese(cheddar, caerphilly, double glouster anything that appeals)
  • 6 c
    fine bread crumbs(progresso or panko)
  • 1 Tbsp
    dry mustard(i use colman's)
  • ·
    salt and pepper
  • 2 large
    onions minced(you can use 1/2 onion and 1/2 chooped apple if you like)
  • 2 tsp
    herbs d' provence
  • 3 large
    eggs well beaten
  • ·
    flour to coat before frying
  • ·
    oil or lard for frying

How to Make Grandma Smith's Glamorgan Sausages


  1. Mix up all of the ingredients except the eggs.
  2. Make a well and pour in the eggs. Mix well
  3. Form into small sausages. Coat in flour and fry i n oil until browned
  4. Served with mashed potatoes for authenticity or your favorite omelet
