  • 3 cups grated cheese(cheddar, caerphilly, double glouster anything that appeals)
  • 6 cups fine bread crumbs(progresso or panko)
  • 1 tablespoon dry mustard(i use colman's)
  • - salt and pepper
  • 2 large onions minced(you can use 1/2 onion and 1/2 chooped apple if you like)
  • 2 teaspoons herbs d' provence
  • 3 large eggs well beaten
  • - flour to coat before frying
  • - oil or lard for frying
