These are wonderful muffins in the morning or as a snack. We make a batch whenever we are on a road trip - perfect in the car!

Ingredients

  • 1 1/2 cups flour
  • 2/3 cup sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup oatmeal, uncooked
  • 2 - bananas large
  • 1/3 cup milk, 2%
  • 1/4 cup vanilla yogurt
  • 1 teaspoon vanilla
  • 2 - eggs

How To Make banana oatmeal muffins

  • Step 1
    combine dry ingredients in a bowl, combine wet ingredients in another bowl. Add wet ingredients to dry and mix just until combined.
  • Step 2
    Bake at 350 for approximately 25 minutes or until toothpick in center comes out clean
  • Step 3
    Notes: The original recipe calls for buttermilk, I use 2% milk instead. The original recipe also uses oil instead of yogurt. I much prefer the yogurt. The texture is better and the flavor is better. I have also tried strawberry yogurt and that was good also. You can add cinnamon or nutmeg if you which.
