Grab these instead of sugar packed granola bars. They are less expensive and you know exactly what is in them. They are great. They are Gluten free and diabetic friendly. Found them on sugarfreemom.com, a great web site for diabetics.

Ingredients

  • 1 teaspoon vanilla
  • 6 individ packages stevia (sugar subistute)
  • 2 - whole eggs
  • 2 cups unsweetened applesauce
  • 5 cups old fashion oats (not minute oats)
  • 1/4 cup flaxseed meal
  • 1 tablespoon cinnamon
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • - optinal toppings: raisins, walnuts, small choclate chips
  • 1 - mashed banana (i forgot to add it earlier)

How To Make baked oatmeal to go

  • Step 1
    Preheat oven to 350.
  • Step 2
    Mix eggs, vanilla, applesauce, mashed banana, & stevia.
  • Step 3
    Add oats, flax meal, cinnamon, baking powder,salt and mix well with the above wet ingredients. Add milk and mix well.
  • Step 4
    Spray a 12 & 6 cup muffin tin with cooking spray or use liners.
  • Step 5
    Pour mix into muffin tin or liners. If adding optinal toppings add them now. Bake 30 minutes. They may be frozen in gallon freezer containers.
