ham and pineapple rings
My Dad picked up this recipe while he was at The Naval Academy. He always said this was Sunday Breakfast. It became the 'Special Occasion Breakfast, in our house growing up (Christmas, Easter, birthdays ect.) You can make it with Bisquik, but it just doesn't taste the same. Ingredients
- - 1 oscar mayer ham steak cut into fourths
- 1 can del monte pineapple rings
- 1 3/4 cups all purpose flour
- 2 tablespoons sugar
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 1/2 cups of the liquid off the pineapple , making up the difference with milk
- 3 tablespoons crisco oil or melted butter
- 1 - large egg
- 1 1/2 cups of crisco for frying
How To Make ham and pineapple rings

Step 1Cook the ham over medium low heat. While it's cooking mix together the dry pancake ingredients together, In a large measuring cup ( 8 cup size) or a smaller bowl mix together the pineapple juice, milk,and Crisco or butter and the egg. Beat with a whisk until well blended. Make a well in the flour mixture and gently pour the liquid in. Mix the two together until well blended by hand,

Step 2Heat the oil at 400 degrees. Dip the pineapple rings into the batter and gently lay them in the hot oil cook 5-7 minutes until golden brown, then turn and cook on the other side until golden brown. Remove and let drain on a paper towel. Serve with the Ham and enjoy!
