Ingredients

2 c
heart healthy bisquick baking mix
2
eggs
1 c
1% milk
1/2 c
club soda
1 Tbsp
canola oil, or vegetable oil
1 c
frozen or fresh blueberries
1/4 c
maple syrup

How to Make On the go blueberry pancake muffins

Step-by-Step

  • 1Heat oven to 350. Spray a 12 muffin pan w/ cooking spray. In lg bowl, combine bisquick mix,eggs, milk, club soda and oil. Pour evenly into muffin cups.
  • 2Sprinkle each cup w/ blueberries. Bake about 20 mins, or until a toothpick inserted in center comes out clean. Brush tops w/ syrup.
