chewy fruit oatmeal bars
I have been making these oatmeal bars since about 2007. All my family, friends, and co-workers that have eaten them love them. I typically use whatever dry fruits I have on hand. I believe the more variety of fruits the better. Sometimes I add approximately 1/3 c. shredded coconut to the mixture; when doing so, I add a little extra applesauce or milk to gain the desired consistency. The bars can be stored in a tin or any container in the refrigerator for 1-2 weeks--if they last that long. The bars can be easily frozen for future use if desired.

Ingredients
- 3/4 cup brown sugar, firmly packed
- 1/2 cup granulated sugar
- 8 ounces vanilla or plain, low fat yogurt
- 2 - egg whites, slightly beaten
- 2 tablespoons applesauce, unsweetened
- 2 tablespoons skim milk
- 2 teaspoons vanilla extract
- 1 cup whole wheat flour
- 1/2 cup all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon, ground
- 1/2 teaspoon salt
- 3 cups old fashioned oats, uncooked
- 1 cup dried, diced/chopped apples, dates, figs, prunes, cranberries, and/or raisins
- 1/4 to 1/2 cup almonds, slices
- 1/3 cup coconut, shredded - optional
How To Make chewy fruit oatmeal bars

Step 1Preheat oven to 350 degrees F.

Step 2In large bowl combine sugars, yogurt, egg whites, applesauce, milk and vanilla. Mix well.

Step 3In separate bowl combine flours, baking soda, cinnamon, and salt; stir together well.

Step 4Add dry ingredients to yogurt mixture and stir together well (by hand). Stir in oats, diced fruits, and almonds.

Step 5Spread dough in an ungreased, 9" x 13" pan. Bake 28 - 32 minutes until golden brown. Cool bars completely before cutting into bars.
