Ingredients

  • 6
    egg whites
  • 6
    fresh mushrooms, chopped
  • 1 medium
    sweet onion, diced
  • 1 medium
    green bell pepper, diced
  • 1/2 c
    seed grape tomatoes, whole or diced
  • 1 Tbsp
    herbs of choice
  • 3 Tbsp
    ground flax meal
  • 3 Tbsp
    parmesan cheese, fat-free
  • 1 tsp
    mrs. dash seasoning
  • 1/2 tsp
    pepper

How to Make Veggie Frittata

Step-by-Step

  1. Preheat oven to 350 F while dicing vegetables. Then combine ingredients and mix thoroughly. (Some people prefer to saute vegetables before; that's up to you.)
  2. Spray baking dish (I use a round pie pan or deep dish pizza pan) with cooking spray.
  3. Pour mixed ingredients into dish and bake 20-25 minutes, until eggs are firm.
