This is a tasty way to get my husband to eat kale- a super food. The fresh basil really adds flavor, but you can use dried if you wish. I recommend sauteeing the dried herbs in butter along with veggies before baking so they soften a bit.

    egg whites
  • 1 c
    fresh kale, chopped
  • 2 oz
    fresh basil, chopped
  • 1/4 c
    fat free sour cream
  • 3/4 c
    diced ham (optional)
  • 1 tsp
    seasoned salt
  • 1 dash(es)
  • 1/2 tsp
    oregano (dried)

How to Make Kale & Basil Frittata


  1. Mix ingredients in a mixing bowl until eggs are frothy.
  2. Pour batter into a greased casserole dish.
  3. Bake at 350 for 45 minutes to an hour, until a toothpick comes out clean.
  4. Top with shredded cheese if you wish.
  5. I usually use whatever vegetables I have on hand for this recipe. If carrots or celery, I saute them before hand.
