This is a tasty way to get my husband to eat kale- a super food. The fresh basil really adds flavor, but you can use dried if you wish. I recommend sauteeing the dried herbs in butter along with veggies before baking so they soften a bit.

Ingredients

12
egg whites
1 c
fresh kale, chopped
2 oz
fresh basil, chopped
1/4 c
fat free sour cream
3/4 c
diced ham (optional)
1 tsp
seasoned salt
1 dash(es)
pepper
1/2 tsp
oregano (dried)

Step-By-Step

1Mix ingredients in a mixing bowl until eggs are frothy.
2Pour batter into a greased casserole dish.
3Bake at 350 for 45 minutes to an hour, until a toothpick comes out clean.
4Top with shredded cheese if you wish.
5I usually use whatever vegetables I have on hand for this recipe. If carrots or celery, I saute them before hand.
