kale & basil frittata

This is a tasty way to get my husband to eat kale- a super food. The fresh basil really adds flavor, but you can use dried if you wish. I recommend sauteeing the dried herbs in butter along with veggies before baking so they soften a bit.

Ingredients

  • 12 - egg whites
  • 1 cup fresh kale, chopped
  • 2 ounces fresh basil, chopped
  • 1/4 cup fat free sour cream
  • 3/4 cup diced ham (optional)
  • 1 teaspoon seasoned salt
  • 1 dash pepper
  • 1/2 teaspoon oregano (dried)

How To Make kale & basil frittata

  • Step 1
    Mix ingredients in a mixing bowl until eggs are frothy.
  • Step 2
    Pour batter into a greased casserole dish.
  • Step 3
    Bake at 350 for 45 minutes to an hour, until a toothpick comes out clean.
  • Step 4
    Top with shredded cheese if you wish.
  • Step 5
    I usually use whatever vegetables I have on hand for this recipe. If carrots or celery, I saute them before hand.
