kale & basil frittata
This is a tasty way to get my husband to eat kale- a super food. The fresh basil really adds flavor, but you can use dried if you wish. I recommend sauteeing the dried herbs in butter along with veggies before baking so they soften a bit.

Ingredients
- 12 - egg whites
- 1 cup fresh kale, chopped
- 2 ounces fresh basil, chopped
- 1/4 cup fat free sour cream
- 3/4 cup diced ham (optional)
- 1 teaspoon seasoned salt
- 1 dash pepper
- 1/2 teaspoon oregano (dried)
How To Make kale & basil frittata

Step 1Mix ingredients in a mixing bowl until eggs are frothy.

Step 2Pour batter into a greased casserole dish.

Step 3Bake at 350 for 45 minutes to an hour, until a toothpick comes out clean.

Step 4Top with shredded cheese if you wish.

Step 5I usually use whatever vegetables I have on hand for this recipe. If carrots or celery, I saute them before hand.
