This is my healthy breakfast idea under 360 calories, it was only 359 calories, and I was full and satisfied, and I had no guilt afterwards. I made this simple omelet using a generic Egg Beaters substitute, by adding chopped shallots sweet red or green peppers, and a 1/4 cup of finely shredded cheddar cheese. The calories would have been less had I used a low fat or fat free cheese. I enjoyed a nice healthy breakfast without the guilt and this is one way you can do it too if you are watching your intake and trying to eat a bit healthier these days. I usually add milk but had it at lunch

Ingredients

  • - non stick cooking spray for skillet
  • 1/4 cup chopped bell peppers
  • 1/4 cup chopped shallots or onions
  • 1/4 cup finely shredded cheddar cheese
  • 1/2 cup generic or egg beaters egg substitute
  • 2 cups fresh quartered strawberries
  • 1 slice healthy life bread toasted (plain)

How To Make healthy breakfast idea

  • Step 1
    Spray a small to medium skillet with non stick cooking spray.
  • Step 2
    Chop shallots and peppers, and add to skillet heating over medium high heat, stir till veggies are transparent and slightly tender, then add the egg substitute, & half of the shredded cheese. When bottom is set, with the tip of a spatula, slip the tip under the omelet, and roll it over on itself. Then add the remaining cheese while still in skillet, and allow to melt.
  • Step 3
    Transfer to a plate, add quartered strawberries, and 1 slice of toasted Healthy Life 35 calorie bread. Breakfast is now served, add a cup of coffee and no extra calories are added.
