I made this simple omelet using a generic Egg Beaters substitute, by adding chopped shallots sweet red or green peppers, and a 1/4 cup of finely shredded cheddar cheese. The calories would have been less had I used a low fat or fat free cheese.
I enjoyed a nice healthy breakfast without the guilt and this is one way you can do it too if you are watching your intake and trying to eat a bit healthier these days. I usually add milk but had it at lunch
·non stick cooking spray for skillet
1/4 cchopped bell peppers
1/4 cchopped shallots or onions
1/4 cfinely shredded cheddar cheese
1/2 cgeneric or egg beaters egg substitute
2 cfresh quartered strawberries
1 slicehealthy life bread toasted (plain)
How to Make Healthy Breakfast Idea
- Chop shallots and peppers, and add to skillet heating over medium high heat, stir till veggies are transparent and slightly tender, then add the egg substitute, & half of the shredded cheese. When bottom is set, with the tip of a spatula, slip the tip under the omelet, and roll it over on itself. Then add the remaining cheese while still in skillet, and allow to melt.
