This is the funnest dish. The spinach doesn't over power the eggs so it's a good way to sneak in those veggie servings for the kids. Give it a try, you won't be sorry!!

Ingredients

2 1/2 c
spinach leaves
12
eggs
1 tsp
kosher salt
2 Tbsp
unsalted butter
thin ham slices

How to Make Green Eggs and Ham

Step-by-Step

  • 1Blanch spinach. Squeeze out all excess water from spinach as if you are squeezing a sponge.
  • 2Puree spinach and eggs until smooth
  • 3In a muffin tin, line each cup with ham creating a "bowl". Bake in oven 10 - 15 minutes. Just until it starts to brown some. You want it to keep the cup shape.
  • 4Drop tablespoon butter in hot skillet and add eggs. Cook and remove from pan. Should be soft moist and fluffy.
  • 5Place ham"cup" on plate and fill with green eggs.
  • 6Enjoy
