green eggs and ham
This is the funnest dish. The spinach doesn't over power the eggs so it's a good way to sneak in those veggie servings for the kids. Give it a try, you won't be sorry!!

Ingredients
- 2 1/2 cups spinach leaves
- 12 - eggs
- 1 teaspoon kosher salt
- 2 tablespoons unsalted butter
- - thin ham slices
How To Make green eggs and ham

Step 1Blanch spinach. Squeeze out all excess water from spinach as if you are squeezing a sponge.

Step 2Puree spinach and eggs until smooth

Step 3In a muffin tin, line each cup with ham creating a "bowl". Bake in oven 10 - 15 minutes. Just until it starts to brown some. You want it to keep the cup shape.

Step 4Drop tablespoon butter in hot skillet and add eggs. Cook and remove from pan. Should be soft moist and fluffy.

Step 5Place ham"cup" on plate and fill with green eggs.
