How to Make Green Eggs and Ham
- Blanch spinach. Squeeze out all excess water from spinach as if you are squeezing a sponge.
- Puree spinach and eggs until smooth
- In a muffin tin, line each cup with ham creating a "bowl". Bake in oven 10 - 15 minutes. Just until it starts to brown some. You want it to keep the cup shape.
- Drop tablespoon butter in hot skillet and add eggs. Cook and remove from pan. Should be soft moist and fluffy.
- Place ham"cup" on plate and fill with green eggs.
