Ingredients
- 2 large eggs,beaten
- 1 tablespoon ricotta cheese,whole milk
- 1/8 cup half and half,fat free
- 1/4 medium zucchini
- 1 large mushroom,sliced
- 1/4 small bell pepper,any color
- 1 tablespoon shallots,chopped
- 1 tablespoon parsley, italian,chopped
- 1 pinch salt and pepper
- 2 slices butter,plus one teaspoon olive oil for frying the omelet
- 1/4 cup grated cheese
How To Make farmer's market omelet

Step 1Begin by combining the eggs,ricotta,half and half,salt,pepper in a mixing bowl.

Step 2Using half of the butter and half of the oil in a non-stick frying pan, saute the shallots,then the rest of the vegetables until just tender,remove to a separate bowl.

Step 3Add the remaining butter and oil,once that has melted add the egg mixture,using a rubber spatula,slowly start to cook the eggs until they are almost set. Spread the vegetable mixture all over the top of the eggs and sprinkle with cheese,now fold it over in half. Ola-la! You just made a farmer's omelet! Enjoy!! :)
