easy omelet that'll put spurs in your ribs
I love a good Omelet in the morning for breakfast or even for lunch or dinner. But I don't always have time or the right produce to make a good pico de gallo. But I always have a can or RO*TEL or good salsa on the shelf that I can open and smother the omelet in. The hot chilies will get you off to good start.

- 3 - large eggs, beaten
- 1 can ro*tel diced tomatoes with green chili peppers or a good salsa
- - green pepper,onions, potato, mushrooms

Step 1beat 3 eggs and spread out on a hot griddle

Step 2add diced vegetables of your choice when ii is mostly done and fold the egg over until done.
