What a great breakfast! Also great to use up Your leftover corned beef. Or if Your like my family and don't care for corned beef, or theres no leftovers, here is a semi-homemade recipe.! Recipe idea from foodnet.

Ingredients

  • 1 cup whole milk
  • 1 large egg
  • 1 cup frozen spinach thawed and squeezed
  • 1/3 cup chopped green onion
  • 1 cup flour
  • 1 teaspoon baking powder
  • - pinch of salt and pepper
  • 1 cup cheddar cheese
  • TOPPING
  • 4 - fried eggs optional
  • 2 cups prepared corned beef hash

How To Make corned beef hash over spinach cakes

  • Step 1
    Combine and mix first 7 ingredients, let set for 5 minutes in bowl, then add your cheddar cheese. In large skillet on med-high heat add oil or butter, when heated add 1/4 cup up batter to pan and flatted. Cook til edges start to brown and flip and cook for another 2 mins. Repeat with rest of batter.
  • Step 2
    Top 2 cakes with 1/2 cup corned beef hash and optional fried egg.
