My Fitness Pal has some wonderful and easy recipes for low calorie and high protein breakfast. Had to share this one. Easy and good. Only 271 calories!!!

Ingredients

4 small
corn tortillas
4 oz
reduced sodium deli ham
1/4 medium
red bell pepper, chopped
2 Tbsp
shredded cheese
2 large
eggs
1/2
fresh jalapeno, seeded and chopped (if desired)
enjoy with salsa, sour cream or avocado, if desired.

How to Make Baked Egg and Ham Tortillas

Step-by-Step

  • 1Spray baking sheet with cooking spray, lay two tortillas down, top with peppers, ham an cheese, top with second tortilla, carefully crack egg over top.
  • 2Bake at 400F for 10-12 minutes.
