My Fitness Pal has some wonderful and easy recipes for low calorie and high protein breakfast. Had to share this one. Easy and good. Only 271 calories!!!

Ingredients

  • 4 small corn tortillas
  • 4 ounces reduced sodium deli ham
  • 1/4 medium red bell pepper, chopped
  • 2 tablespoons shredded cheese
  • 2 large eggs
  • 1/2 - fresh jalapeno, seeded and chopped (if desired)
  • - enjoy with salsa, sour cream or avocado, if desired.

How To Make baked egg and ham tortillas

  • Step 1
    Spray baking sheet with cooking spray, lay two tortillas down, top with peppers, ham an cheese, top with second tortilla, carefully crack egg over top.
  • Step 2
    Bake at 400F for 10-12 minutes.
