videlia onion pie
I make this a lot for work breakfasts. Our favorite combo is Ritz crackers and Swiss cheese, but you can use whatever kind of cracker/cheese combo you like. Sometimes I fry 6 slices of bacon crisp and crumble it over the pie crust. Then I saute the onions in the bacon fat instead of the oil. It freezes well if there are leftovers, just put the frozen slice into the oven at 350 for about 20 minutes or so. Enjoy.

Ingredients
- 1 cup cracker crumbs ( 1 sleeve of crackers, crushed)
- 5 tablespoons melted butter
- 2 1/2 cups videlia onions (or any sweet onion) thinly sliced
- 2 - eggs
- 3/4 cup milk
- 1/4 cup cheese, shredded
- - salt and pepper
How To Make videlia onion pie

Step 1Combine crumbs and butter. Press into an 8” pie pan. Bake 8 minutes at 350. Cool.

Step 2Saute onions in oil until tender. Put into the pie shell. Mix eggs, milk, salt & pepper and pour over onions. Top with cheese and bake at 350 for 45 minutes. (you could also use Walla Walla Sweets)
