A great way to use the leftover roast for brunch. Prep time includes overnight refrigeration time, if using that option.

Ingredients

  • 12 slices whole-grain bread, halved
  • 2 cups shredded monteray jack cheese
  • 1 1/2 cups cooked roast beef, cut into bite-sized pieces (or pork roast or lamb roast)
  • 1 cup shredded carrot
  • 4 - eggs
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil

How To Make use up that leftover roast breakfast strata

  • Step 1
    Coat a 13x9x2-inch baking dish with nonstick cooking spray. Layer bread slices to cover bottom of dish. Sprinkle cheese, meat and carrot over bread.
  • Step 2
    In a bowl, stir togeteher the eggs, milk and seasonings until well mixed. Pour carefully over ingredients in baking dish. Cover. Let stand 1 hour at room temperature or in refrigerator overnight. (Take out 30 minutes before baking and let sit at room temperature).
  • Step 3
    Preheat oven to 325F. Uncover baking dish and bake 50 to 60 minutes or until center is nearly set. Let stand 10 minutes. Cut into squares.
