Spinach Mini Quiche
1 boxfrozen spinach, thawed and with water squeezed out
2 largeeggs, beaten
1/3 cfat free cottage cheese
1/3 cparmesan cheese
1 dash(es)each salt, pepper and garlic powder
·nonstick spray (such as pam)
How to Make Spinach Mini Quiche
- Preheat oven to 400. Spray 6 cup muffin pan with nonstick spray, or use a paper towel to lightly grease.
- Combine spinach, eggs, cheeses, salt, pepper and garlic powder in a small bowl.
- Spoon mixture into muffin cups, dividing evenly.
- Bake about 20 minutes at 400. Let cool slightly. Run a knife or small spatula around the quiches to loosen before removing from the pan. Serve warm or cold.
