Ingredients
- 1 box frozen spinach, thawed and with water squeezed out
- 2 large eggs, beaten
- 1/3 cup fat free cottage cheese
- 1/3 cup parmesan cheese
- 1 dash each salt, pepper and garlic powder
- - nonstick spray (such as pam)
How To Make spinach mini quiche

Step 1Preheat oven to 400. Spray 6 cup muffin pan with nonstick spray, or use a paper towel to lightly grease.

Step 2Combine spinach, eggs, cheeses, salt, pepper and garlic powder in a small bowl.

Step 3Spoon mixture into muffin cups, dividing evenly.

Step 4Bake about 20 minutes at 400. Let cool slightly. Run a knife or small spatula around the quiches to loosen before removing from the pan. Serve warm or cold.
