Ingredients For spinach mini quiche

  • 1 box
    frozen spinach, thawed and with water squeezed out
  • 2 lg
    eggs, beaten
  • 1/3 c
    fat free cottage cheese
  • 1/3 c
    parmesan cheese
  • 1 dash
    each salt, pepper and garlic powder
  • nonstick spray (such as pam)

How To Make spinach mini quiche

  • 1
    Preheat oven to 400. Spray 6 cup muffin pan with nonstick spray, or use a paper towel to lightly grease.

    Combine spinach, eggs, cheeses, salt, pepper and garlic powder in a small bowl.

    Spoon mixture into muffin cups, dividing evenly.

    Bake about 20 minutes at 400. Let cool slightly. Run a knife or small spatula around the quiches to loosen before removing from the pan. Serve warm or cold.
