This is a great Keto/Low Carb egg bake that stands out from the typical ones because of the use of Rotel's. It's delicious and filling and great on it's own or served with a veggie or salad.

Ingredients
- 1 pound jimmy dean spicy ground sausage
- 2 cans rotel's green chili's and tomatoes, very well drained
- 9 - eggs
- 2 cups grated cheddar cheese (or your choice)
- 1 cup heavy cream
- 3-4 - green onions
- to taste salt and pepper
How To Make sausage rotel egg bake

Step 1Preheat oven to 375

Step 2Cook ground sausage and drain well then transfer to a casserole dish or pan.

Step 3Top sausage with Rotel’s. (drain really well)

Step 4Beat eggs with heavy cream, salt and pepper.

Step 5Pour eggs over sausage and Rotel.

Step 6Sprinkle on green onions and cheese.

Step 7Bake for 30-45 minutes depending on the depth of your pan. We did 45 min because our pan was so deep.

Step 8Let set up for 5 min before serving.
