This makes a great Sunday Brunch addition. This is delicious and also tastes good the next day. My husband loves it when I make this with fresh blueberries.

Ingredients

  • 1/4 cup sugar
  • 1 teaspoon cinnamon, ground
  • 4 - egg whites
  • 1 teaspoon vanilla extract
  • 16 ounces loaf of whole wheat or multi grain bread
  • 5 cups mixed berries, fresh or frozen
  • 1/2 teaspoon lemon juice
  • 1 - egg
  • 1 cup low fat milk
  • 1 tablespoon honey
  • OVEN BAKED BERRY TOAST

How To Make oven baked berry toast

  • Step 1
    Preheat oven to 350 degrees. Using a 2 qt oblong baking pan, mix together the berries, sugar,lemon juice and cinnamon. Spread the berries across the bottom of the pan in an even layer. In a medium bowl, combine egg, egg whites, milk and vanilla. Add the bread (I usually just rip the bread into 1 inch pieces) and soak for 2 to 3 minutes, push the bread down into the liquid, and then turn and soak the bread for another 2 minutes. Arrange bread in a single layer over the berries. Drizzle the bread with honey.
  • Step 2
    Bake for 25-30 minutes or until the bread is golden. **can use any kind of berry, fresh or frozen with the juice**
