oatmeal pancakes

Home made pancakes that are quick and delicious and even good for you! Sometimes I drop cheddar cheese, chopped ham and canned or cooked mushrooms into the pancake's raw side before flipping. These can be good for brunch also.

Ingredients
- 2 cups oats
- 2 cups buttermilk
- 2 - large eggs beaten
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar, firmly packed
- 1/2 cup flour
- 1 teaspoon each of baking powder & soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
How To Make oatmeal pancakes

Step 1Combine the oats, buttermilk, eggs, oil and vanilla and let stand covered 30 minutes to overnight in the ref.

Step 2Combine the dry ingredients, break up any lumps. Combine with the liquid and don't over beat.

Step 3Cook on medium heat on lightly oiled grill. Turn once the top has formed dry edges & bubbles appear. Place in warm oven (200 degrees) till serving. Serve immediately when possible.
