Home made pancakes that are quick and delicious and even good for you!
Sometimes I drop cheddar cheese, chopped ham and canned or cooked mushrooms into the pancake's raw side before flipping. These can be good for brunch also.

Ingredients

2 c
oats
2 c
buttermilk
2
large eggs beaten
1/4 c
vegetable oil
1 tsp
vanilla extract
1/4 c
brown sugar, firmly packed
1/2 c
flour
1 tsp
each of baking powder & soda
1/4 tsp
salt
1 tsp
cinnamon

How to Make Oatmeal Pancakes

Step-by-Step

  • 1Combine the oats, buttermilk, eggs, oil and vanilla and let stand covered 30 minutes to overnight in the ref.
  • 2Combine the dry ingredients, break up any lumps. Combine with the liquid and don't over beat.
  • 3Cook on medium heat on lightly oiled grill. Turn once the top has formed dry edges & bubbles appear. Place in warm oven (200 degrees) till serving. Serve immediately when possible.
