This is a great way to start your day with healthy and fully nourishing morning meal for family or gathering. Can be made ahead stored in fridge to cooked before morning meal. We use a variety of breakfast meats including soy crumbles to give protein but healthy. Enjoy and stay healthy.

2 c
crushed crackers (any flavor)
1 small
onion diced
1 small
diced zucchini or yellow squash
1 medium
tomato diced
1 c
breakfast meat of your choice (pre-cooked)
eggs - whipped together
1 c
grated cheese of your choosing
2 Tbsp
light cream
1 tsp
salt and pepper
2 Tbsp
olive oil, light


1Take crackers and olive oil mix together in bowl. Spread in baking dish evenly. Saute onions in water/oil mixture until clear and tender. Add vegatables (squash/tomatoes/zucchini), cook until tender. Spread meat over crackers, add layer of sauted vegtables. Whip eggs in separate bowl add the light cream/salt and pepper. Pour over the top of the other ingredients and sprinkle grated cheese on top. cover with foil and cook at 360 degree oven for 25 to 30 minutes. Serve with fresh fruit.
