I created this recipe by considering all the healthy ingredients that could go in it and sounded great! The measurements are not exact but hope I got close enough. I made this for my son's birthday brunch as we're both watching our weight. He raved about it, so I hope you try it and let me know what you think!
This easy breakfast casserole is a great recipe if you're serving a crowd. Parboiling the potatoes means the casserole can quickly be made in the morning. Canadian bacon on top is a nice salty contrast to the cheesy egg filling.
