healthy baked oatmeal
I am not fond of cooked oatmeal, but this baked oatmeal is more like a breakfast bread than it is a hot cereal. This recipe is adapted from myrecipes.com.

Ingredients
- 2 cups oatmeal, old-fashioned or quick-cooking
- 1/2 cup packed brown sugar
- 1/3 cup golden raisins
- 2 tablespoons chopped nuts, any kind
- 1 teaspoon baking powder
- 1-2 teaspoon pumpkin pie spice
- 1 1/2 cups fat-free milk
- 1/2 cup applesauce
- 2 tablespoons butter, melted
- 1 - egg, beaten
- - cooking spray
How To Make healthy baked oatmeal

Step 1Preheat oven to 375 degrees. Spray an 8" x 8" baking dish with cooking spray

Step 2Combine the first 6 ingredients in a medium mixing bowl.

Step 3Combine the milk, applesauce, melted butter, and beaten egg

Step 4Add the milk mixture to the oat mixture; stir well.

Step 5Pour combined mixture into a the prepared baking dish.

Step 6Bake at 375 degrees for 20 minutes. Cut into individual servings and enjoy.

Step 7NOTE: Individual servings can be frozen and thawed and warmed in a microwave. Makes a very fast, delicious breakfast.
