This makes a really nice brunch quiche - goes great with a nice green salad for a light lunch or other breakfast dishes for breakfast.

Ingredients For green chile & egg breakfast casserole

  • 5
    eggs
  • 2 Tbsp
    butter, melted
  • 1/4 c
    flour
  • 1/2 tsp
    baking powder
  • 1
    8 oz. carton cottage cheese
  • 2 c
    monterey jack cheese, shredded
  • 1 can
    4-oz. can chopped green chilies, drained
  • 1
    tomato, sliced
  • salsa and/or sour cream for topping

How To Make green chile & egg breakfast casserole

  • 1
    Combine the eggs, butter, flour and baking powder - mix well.
  • 2
    Stir cheeses and chilies into mixture.
  • 3
    Pour mixture into a well greased quiche dish and bake in a 400 degree oven for 10 minutes.

    Slice tomato and place on top of quiche and return to the oven. Reduce heat to 350 degrees and bake an additional 20 minutes.

    Serve with salsa and sour cream.
