I Loveeeeeeee Frittata's, They're so versatile and hearty. This Frittata was made with the few things I had left in my fridge and Freezer. And it came out soooo delicious. enough to serve a family of 6 for breakfast! I hope you all give this a try!

Ingredients
- 10 - eggs
- 5 Strips - bacon
- 1 box frozen spinach, thawed & drained thoroughly
- 1 small yellow onion
- 1 1/4 cups mozzarella cheese
- 2-4 small potatoes
- 1T - butter
How To Make frittata con spinaci (frittata with spinach)

Step 1In a medium dice, Dice the bacon, and cook until Semi-Crisp

Step 2Small dice potatoes & onion and cook in bacon fat until browned.

Step 3Beat the eggs thoroughly, add the Drained spinach and 1 cup of Mozzarella and beat until combined and evenly distributed (Saving the other 1/4 cup)

Step 4On a medium heat with 1T of butter, add the egg mixture, While that's happening preheat your oven too 400 degrees.

Step 5Cook until the bottom is set. Place the 1/4c of Mozzarella on the top and bake until cheese is browned and is set all the way through

Step 6After removing from oven, slide out onto a plate immediately and cool for 5 minutes before cutting into. Serve with a dollop of Sour Cream and enjoy! :)
