Wanting something different, I made this greek-style dish. You can have it as an appetizer or as a meal, served w/ a salad.

  • 1/4 c
    olive oil
  • 1 Tbsp
    white wine vinegar
  • 3 tsp
    minced garlic
  • 2 tsp
    dried oregano
  • 1 tsp
  • 1/2 tsp
  • 1 c
    red bell pepper, diced
  • 1/2 c
    red onion, diced
  • 6 large
    pitted kalamta olives, halved
  • 10 large
  • 1/3 c
    reduecd-fat crumbled feta cheese.

How to Make Fabulous greek-style frittata


  1. In medium bowl, whisk together oil and vinegar. Whisk in garlic, oregano, pepper and salt. Stir in red bell pepper, onion and olives.
  2. Heat oven to 400. Spray a 9" pie pan w/ cooking spray. In bowl, beat eggs. Drain pepper mix, blend into eggs.
  3. Pour into pan. Bake for 15 mins. Dot the top w/ feta cheese. Bake additional 20 mins, or until set. Sprinkle top lightly w/ olive oil. Slice into 4 slices.
