Wanting something different, I made this greek-style dish. You can have it as an appetizer or as a meal, served w/ a salad.

Ingredients
- 1/4 cup olive oil
- 1 tablespoon white wine vinegar
- 3 teaspoons minced garlic
- 2 teaspoons dried oregano
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 1 cup red bell pepper, diced
- 1/2 cup red onion, diced
- 6 large pitted kalamta olives, halved
- 10 large eggs
- 1/3 cup reduecd-fat crumbled feta cheese.
How To Make fabulous greek-style frittata

Step 1In medium bowl, whisk together oil and vinegar. Whisk in garlic, oregano, pepper and salt. Stir in red bell pepper, onion and olives.

Step 2Heat oven to 400. Spray a 9" pie pan w/ cooking spray. In bowl, beat eggs. Drain pepper mix, blend into eggs.

Step 3Pour into pan. Bake for 15 mins. Dot the top w/ feta cheese. Bake additional 20 mins, or until set. Sprinkle top lightly w/ olive oil. Slice into 4 slices.
