This is a perfect breakfast casserole. Healthy!!

  • 4 large
    eggs, lightly beaten
  • 2 Tbsp
    grated paarmesan cheese
  • 2 Tbsp
    canola oil
  • 1 large
    zucchini, cut into 1/4"-thick slices
  • ·
    garlic powder to taste
  • ·
    salt & pepper to taste

How to Make Egg & zucchini breakfast


  1. In bowl, whisk together eggs and parmesan cheese. Heat oil ilg skillet over med-high heat. Add zucchini, and stirring, cook until browned.
  2. Season w/ garlic powder, salt & pepper. Reduce heat to medium. Pour egg mix into skillet. Cook, stirring gently for 3 mins.
  3. Remove skillet from heat. Cover for 2 mins or until eggs aree set.
