Ingredients

  • 1 medium
    onion chopped
  • 1 medium
    celery stalk chopped
  • 1/3 c
    bell pepper red
  • 1/3 c
    bell pepper green
  • 1/2 c
    water
  • 4 large
    potatoes, boiled and peeled
  • 1 c
    cooked rice
  • 1 tsp
    ground cumin
  • 1 Tbsp
    soy sauce, light

How to Make EAST WEST BREAKFAST

Step-by-Step

  1. In a large skillet saute the onion, celery, and bell peppers in 1/4 cup water.
  2. Add the potatoes and remaining 1/4 cup water.
  3. Cook stirring gently until the vegetables are tender, about 5 minutes.
  4. Stir in the rice, cumin, and soy sauce.
  5. Cook stirring until the bottom browns lightly about 2 minutes.
