Crust-less Quiche

Making a large quiche and either sharing with others, or having left-over's for days, is a great way to start your daily breakfast. I make mine without a crust to cut back on the bread intake. And all the vegetables included make this a delightfully tasty and healthy meal.

Ingredients

  • 2 c
    spinach, chopped
  • 1/2 c
    zucchini, chopped
  • 1/2 c
    yellow squash, chopped
  • 1/2 c
    red bell pepper, chopped
  • 1/4 c
    onion, chopped
  • 1 c
    provolone cheese, chopped
  • 1 tsp
    red pepper flakes
  • 8-10
    eggs
  • 1/4 tsp
    garlic salt
  • 1/4 tsp
    pepper
  • 3 Tbsp
    flour
  • ·
    spray olive oil

How to Make Crust-less Quiche

Step-by-Step

  1. Preheat oven to 375 degrees. Spray 9x13 baking dish with olive oil cooking spray.
  2. Combine the first 7 ingredients in a large bowl. Mix well. Spoon this mixture into the bottom of the baking dish.
  3. Whisk together the next 5 ingredients. Then pour the egg mixture over the top of the vegetables.
  4. Bake 30-35 minutes or until center is set (a knife inserted in the center will come out clean). Let stand for 5 minutes before serving.
