crust-less quiche

Making a large quiche and either sharing with others, or having left-over's for days, is a great way to start your daily breakfast. I make mine without a crust to cut back on the bread intake. And all the vegetables included make this a delightfully tasty and healthy meal.

Ingredients

  • 2 cups spinach, chopped
  • 1/2 cup zucchini, chopped
  • 1/2 cup yellow squash, chopped
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup onion, chopped
  • 1 cup provolone cheese, chopped
  • 1 teaspoon red pepper flakes
  • 8-10 - eggs
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon pepper
  • 3 tablespoons flour
  • - spray olive oil

How To Make crust-less quiche

  • Step 1
    Preheat oven to 375 degrees. Spray 9x13 baking dish with olive oil cooking spray.
  • Step 2
    Combine the first 7 ingredients in a large bowl. Mix well. Spoon this mixture into the bottom of the baking dish.
  • Step 3
    Whisk together the next 5 ingredients. Then pour the egg mixture over the top of the vegetables.
  • Step 4
    Bake 30-35 minutes or until center is set (a knife inserted in the center will come out clean). Let stand for 5 minutes before serving.
