crust-less quiche
Making a large quiche and either sharing with others, or having left-over's for days, is a great way to start your daily breakfast. I make mine without a crust to cut back on the bread intake. And all the vegetables included make this a delightfully tasty and healthy meal.

Ingredients
- 2 cups spinach, chopped
- 1/2 cup zucchini, chopped
- 1/2 cup yellow squash, chopped
- 1/2 cup red bell pepper, chopped
- 1/4 cup onion, chopped
- 1 cup provolone cheese, chopped
- 1 teaspoon red pepper flakes
- 8-10 - eggs
- 1/4 teaspoon garlic salt
- 1/4 teaspoon pepper
- 3 tablespoons flour
- - spray olive oil
How To Make crust-less quiche

Step 1Preheat oven to 375 degrees. Spray 9x13 baking dish with olive oil cooking spray.

Step 2Combine the first 7 ingredients in a large bowl. Mix well. Spoon this mixture into the bottom of the baking dish.

Step 3Whisk together the next 5 ingredients. Then pour the egg mixture over the top of the vegetables.

Step 4Bake 30-35 minutes or until center is set (a knife inserted in the center will come out clean). Let stand for 5 minutes before serving.
