Making a large quiche and either sharing with others, or having left-over's for days, is a great way to start your daily breakfast. I make mine without a crust to cut back on the bread intake. And all the vegetables included make this a delightfully tasty and healthy meal.

Ingredients

2 c
spinach, chopped
1/2 c
zucchini, chopped
1/2 c
yellow squash, chopped
1/2 c
red bell pepper, chopped
1/4 c
onion, chopped
1 c
provolone cheese, chopped
1 tsp
red pepper flakes
8-10
eggs
1/4 tsp
garlic salt
1/4 tsp
pepper
3 Tbsp
flour
spray olive oil

How to Make Crust-less Quiche

Step-by-Step

  • 1Preheat oven to 375 degrees. Spray 9x13 baking dish with olive oil cooking spray.
  • 2Combine the first 7 ingredients in a large bowl. Mix well. Spoon this mixture into the bottom of the baking dish.
  • 3Whisk together the next 5 ingredients. Then pour the egg mixture over the top of the vegetables.
  • 4Bake 30-35 minutes or until center is set (a knife inserted in the center will come out clean). Let stand for 5 minutes before serving.
