crust-less quiche
We make this at the restaurant for our lodge guests, quick and easy tasty start to the morning. Super easy to make it without meat if you so choose and its just as good.

Ingredients
- 2 tablespoons olive oil
- 2 cups vegetables of choice
- 1/4 cup all purpose flour
- 6 large eggs
- 1 cup nonfat plain yogurt
- 1 cup cottage cheese, lowfat
- 1/2 cup parmesan cheese
- 1/2 teaspoon italian seasoning
- 1/2 pound shrimp, crab, or sausage, your choice or none at all
How To Make crust-less quiche

Step 1Pre heat oven to 350

Step 2Sauté vegetables until tender.

Step 3Mix together flour, eggs, yogurt, cottage cheese, parmesan cheese and hergs. Stir in the vegetables and seafood (or meat) and cheese.

Step 4Pour into a buttered 10 inch quiche pan or pie pan and bake for 45 minutes.

Step 5Allow to stand for 5 minutes before cutting.

Step 6Garnish with sour cream and salsa if desired. The wonderful thing about this is that you can easily make it your own by adding what you like.
