Ingredients
- 5 large eggs
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
- 2 tablespoons butter
- 1/4 cup 1% milk
- 1 - onion, chopped
- 1 - small green bell pepper
- 5 - 7" flour tortillas
- 1 cup favorite salsa
- 1 cup shredded mexican-style cheese, i used reduced fat
- - sour cream and chopped scallions for garnish
How To Make brunch-style burritos

Step 1Heat oven to 350. Lightly spray a 9" x 13" casserole dish w/ cooking spray. In lg bowl, beat eggs, milk, salt and pepper.

Step 2In lg skillet, melt butter over medium heat. Add onions and peppers. Saute until soft. Reduce heat to med-low. Add egg mix, scramble eggs until just cooked and fluffy.

Step 3Evenly spoon egg mix into center of each tortilla. Top w/ 1 tbap salsa. Roll up tortilla and place in casserole dish. Spoon 2 tbsp salsa on top of tortilla, sprinkle w/ cheese. Cover dish w/ foil. Bake 25 mins. Serv w/ sour cream and scallions.
