A eye opening brunch dish. You can make it spicy or mild according to what kind of salsa you use. Serve w/ dollops of sour cream and a scattering of scallions.

Ingredients For brunch-style burritos

  • 5 lg
    eggs
  • 1/4 tsp
    salt
  • 1/4 tsp
    white pepper
  • 2 Tbsp
    butter
  • 1/4 c
    1% milk
  • 1
    onion, chopped
  • 1
    small green bell pepper
  • 5
    7" flour tortillas
  • 1 c
    favorite salsa
  • 1 c
    shredded mexican-style cheese, i used reduced fat
  • sour cream and chopped scallions for garnish

How To Make brunch-style burritos

    Heat oven to 350. Lightly spray a 9" x 13" casserole dish w/ cooking spray. In lg bowl, beat eggs, milk, salt and pepper.

    In lg skillet, melt butter over medium heat. Add onions and peppers. Saute until soft. Reduce heat to med-low. Add egg mix, scramble eggs until just cooked and fluffy.

    Evenly spoon egg mix into center of each tortilla. Top w/ 1 tbap salsa. Roll up tortilla and place in casserole dish. Spoon 2 tbsp salsa on top of tortilla, sprinkle w/ cheese. Cover dish w/ foil. Bake 25 mins. Serv w/ sour cream and scallions.
