bridget's breakfast casserole

We occasionally have breakfast celebrations at work for monthly birthdays or showers. I make this each time we have one of these parties I make this casserole. The first time I made it my coworker Bridget just fell in love with it. She is a self proclaimed non-cook but knew she could do this one, so hence the name Bridget's Breakfast Casserole.

Ingredients
- 2 cups frozen shredded hashbrown potatoes
- 2 cups shredded cheddar cheese
- 6 ounces oscar meyer real bacon bits (2 packages)
- 3 tablespoons dried, minced onions
- 12 - large eggs
- - salt and pepper
How To Make bridget's breakfast casserole

Step 1Preheat oven to 350 degrees.

Step 2Microwave potatoes on high for 3 - 5 minutes until hot, drain if necessary.

Step 3Whisk eggs and salt and pepper (to taste) together.

Step 4Add onions, bacon, and 1 1/2 cups of cheese to eggs. Stir to combine.

Step 5Spray 9 x 13 baking dish with vegetable spray and layer potatoes on the bottom.

Step 6Pour egg mixture over top of potatoes.

Step 7Top with remaining cheese. Bake for 40 minutes or until center is set.

Step 8VARIATIONS: 1. Mexican Casserole ~ use Monterrey jack and cheddar cheese,diced green chilies, and diced tomatoes. 2. French Casserole ~ Use Swiss cheese, chopped ham, chopped spinach, and sliced mushrooms.
