Do you have left over mashed potatoes then use them to line a pie dish and make up this recipe! My dad taught me how to make this! Make your own filling and try it with mashed potatoes!

left over meat
1/2 c
mixed vegetables, frozen or any kind
1/2 c
cheddar any kind
left over mashed potato enough to flatten in pie dish
seasonings to taste

How to Make Breakfast Quiche

Step-by-Step

  • 1Using a fork spread out left over mashed potatoes in a greesed pie dish making the crust instead of pie shell.
  • 2Mix the remainder of ingredients, whisking till well mixed and pour into potato pie dish. Cook at 375 degrees till golden brown and a toothpick comes out clean approx 20 mins.
  • 3Variations: adding onions, potato toppers my recipe for seasoning, greens, any kind of vegetable and left over can go into this!
