1Take all the Vegetables and dice them (make sure to dice the potato's small). Dice up the Sausages into bite size pieces and place all in a 13x9. Sprinkle the spices over all and mix well.
2Take the grated cheeses and sprinkle over the top of the vegetables.
3In a bowl mix the eggs, sour cream and 1/2 and 1/2. Pour evenly over the top of the cheese/veg mix.
4Open can of croissants and unroll. Place over top covering the whole pan.
5Bake at 350.
Make sure to check half way through and cover with foil at this point. Otherwise your croissants may burn. Check periodically by slicing into the middle of the casserole to see if it is firm.
Best served with Salsa/Sour Cream.
