This is a great breakfast and easy to throw together. Makes enough for a large family!

Ingredients

  • 1/2 - red bell pepper
  • 1/2 - orange bell pepper
  • 1/2 - yellow bell pepper
  • 5 - white potatoes, medium
  • 1 - onion
  • 1/2 bunch spinach
  • 1 tablespoon parsley flakes
  • 1 teaspoon salt
  • 1 1/2 teaspoons pepper
  • 1/2 teaspoon garlic pepper
  • 1/2 teaspoon lawry's seasoning
  • 2 packages jimmy dean sausage links
  • 1 cup sliced grape tomato's
  • 2ND STEP
  • 2 cups cheddar cheese
  • 1 cup monterey jack cheese
  • 3RD STEP
  • 6 - eggs
  • 1/2 cup sour cream
  • 1/2 cup 1/2 and 1/2 or milk or heavy cream
  • 4TH STEP
  • 1 can croissants in the can, makes 8

How To Make breakfast casserole

  • Step 1
    Take all the Vegetables and dice them (make sure to dice the potato's small). Dice up the Sausages into bite size pieces and place all in a 13x9. Sprinkle the spices over all and mix well.
  • Step 2
    Take the grated cheeses and sprinkle over the top of the vegetables.
  • Step 3
    In a bowl mix the eggs, sour cream and 1/2 and 1/2. Pour evenly over the top of the cheese/veg mix.
  • Step 4
    Open can of croissants and unroll. Place over top covering the whole pan.
  • Step 5
    Bake at 350. Make sure to check half way through and cover with foil at this point. Otherwise your croissants may burn. Check periodically by slicing into the middle of the casserole to see if it is firm. Best served with Salsa/Sour Cream.
