I love breakfast burritos, but needed to find a way to make in the form of a casserole that I could take out of the oven Christmas morning.

This is what I came up with using healthy ingredients.

Ingredients

12 medium
whole wheat tortillas
3 c
egg substitute
12 Tbsp
bell pepper
12 Tbsp
onion, chopped

laughing cow cheese wedges, light creamy swiss
24 slice
canadian bacon, chopped
1 c
cheddar cheese, shredded (low fat)
1 c
mexican blend shredded cheese
1 c
salsa

How to Make Breakfast Burrito Casserole

Step-by-Step

  • 1Spray skillet with butter spray and saute' bell pepper and onion in skillet until soft. Add the diced canadian bacon and egg substitute until fully cooked.
  • 2Spread 12 tortillas each with 1/2 light cheese wedge. Add the shredded cheddar cheese, & scrambled egg mixture to each tortilla wrapping while warm. Place seam side down in cake pan sprayed with cooking spray.
  • 3Top with shredded Mexican cheese and salsa. Bake in 325 degree oven 20-25 min. or until heated all the way through.
