I love breakfast burritos, but needed to find a way to make in the form of a casserole that I could take out of the oven Christmas morning. This is what I came up with using healthy ingredients.

Ingredients

  • 12 medium whole wheat tortillas
  • 3 cups egg substitute
  • 12 tablespoons bell pepper
  • 12 tablespoons onion, chopped
  • 6 - laughing cow cheese wedges, light creamy swiss
  • 24 slices canadian bacon, chopped
  • 1 cup cheddar cheese, shredded (low fat)
  • 1 cup mexican blend shredded cheese
  • 1 cup salsa

How To Make breakfast burrito casserole

  • Step 1
    Spray skillet with butter spray and saute' bell pepper and onion in skillet until soft. Add the diced canadian bacon and egg substitute until fully cooked.
  • Step 2
    Spread 12 tortillas each with 1/2 light cheese wedge. Add the shredded cheddar cheese, & scrambled egg mixture to each tortilla wrapping while warm. Place seam side down in cake pan sprayed with cooking spray.
  • Step 3
    Top with shredded Mexican cheese and salsa. Bake in 325 degree oven 20-25 min. or until heated all the way through.
