Quick & Easy Breakfast that is very healthy! Bacon can be substituted with Sausage, Turkey Bacon or something else more vegetarian.

  • 1 tablespoon olive oil
  • 1 small onion chopped
  • 2 cups mushrooms sliced
  • 4 slices bacon
  • - spinach chopped
  • 1/2 can roasted chile peppers/red peppers
  • 4 - eggs

How To Make baked egg with mushrooms & spinach

  • Step 1
    Preheat Oven to 375 ° F
  • Step 2
    Skillet: Olive Oil Add onion – cook 3 minutes Add Mushrooms – cook 5 minutes Stir in Bacon, Chiles & Spinach – cook for a few more minutes
  • Step 3
    Lightly grease Ramekins, put in mixture, put egg in each. Bake until whites are set, yolk still runny ? 10 minutes
