Baked Egg with Mushrooms & Spinach



Quick & Easy Breakfast that is very healthy!
Bacon can be substituted with Sausage, Turkey Bacon or something else more vegetarian.

  • 1 Tbsp
    olive oil
  • 1 small
    onion chopped
  • 2 c
    mushrooms sliced
  • 4 slice
  • ·
    spinach chopped
  • 1/2 can(s)
    roasted chile peppers/red peppers
  • 4

How to Make Baked Egg with Mushrooms & Spinach


  1. Preheat Oven to 375 ° F
  2. Skillet:
    Olive Oil
    Add onion – cook 3 minutes
    Add Mushrooms – cook 5 minutes
    Stir in Bacon, Chiles & Spinach – cook for a few more minutes
  3. Lightly grease Ramekins, put in mixture, put egg in each.

    Bake until whites are set, yolk still runny ? 10 minutes
