- 1 small onion chopped
- 2 cups mushrooms sliced
- 4 slices bacon
- - spinach chopped
- 1/2 can roasted chile peppers/red peppers

Step 1Preheat Oven to 375 ° F

Step 2Skillet: Olive Oil Add onion – cook 3 minutes Add Mushrooms – cook 5 minutes Stir in Bacon, Chiles & Spinach – cook for a few more minutes

Step 3Lightly grease Ramekins, put in mixture, put egg in each. Bake until whites are set, yolk still runny ? 10 minutes
