I was looking for a quiche recipe, but couldn't find one that fit what I was craving so I adapted this one from Rachael Ray's Basic Quiche Recipe.

Ingredients

2
refrigerated pie crusts
6
bacon slices
1 small
onion, chopped
1/2 tsp
minced garlic
1 can(s)
mushroom pieces, drained
1 pkg
baby spinach
12
eggs
2 c
milk
1 1/3 c
half and half
2 c
shredded cheddar cheese
pinch
salt and pepper
1/2 tsp
thyme, dried

How to Make Bacon, Mushroom and Spinach Quiche

Step-by-Step

  • 1preheat oven to 425
  • 2chop bacon into bite size pieces and cook in deep skillet. Remove bacon from skillet when done, place on plate lined with paper towel to drain
  • 3add onions, garlic and mushrooms to hot bacon grease, saute 2 minutes then add spinach. Cover and continue cooking
  • 4unroll pie crusts and line pie plates
  • 5place half the chopped bacon in bottom of each crust, spread around. Repeat with spinach and mushroom mixture when spinach is cooked down. Spread to make an even layer
  • 6add eggs, milk and cream to bowl. Beat with wire whisk until well blended
  • 7add cheese and seasonings to egg mixture. Divide between pie crusts.
  • 8bake in 425 oven for 30 - 40 minutes or until eggs are set
