Ingredients

  • 5 large
    eggs/beaten
  • 1 c
    half and half
  • 1/4 c
    romano cheese, grated or any cheese you prefer
  • 2 c
    assorted fresh vegetables,you pick what you like!
  • 1/2 tsp
    salt and pepper plus 1/2 teaspoon baking powder
  • 1 can(s)
    cooking spray
  • 4 medium
    baking dishes or ramekins

How to Make Miniature Crust-less Quiche

Step-by-Step

  1. Pre-heat the oven to 350 degrees. Whisk together the eggs,cream,salt,pepper,baking powder. Chop the vegetables of your choice,(I made these with broccoli and onions,garlic and mushrooms with Romano cheese) :)
  2. Spray the ramekins with the cooking spray,ladle in the egg mixture 3/4 way up and then add the chopped,vegetables,about 2-3 tbsp. Garnish the tops with cheese and bake for 40 minutes at 350 until set.
  3. Test them by inserting a toothpick in the center,if it comes out clean they are done.These can be served with a side of bacon or breakfast sausage with home-fries or with a side of fresh cut fruit or salad at lunch. Enjoy!! :)
