mexican eggs ( huevos rancheros)

This is a Mexican Breakfast dish. I tweaked a recipe found in a cook book. It is full of the fresh Veggies,and a little spicy. Enjoy!

Ingredients For mexican eggs ( huevos rancheros)

  • 1
    bell pepper chopped
  • 1
    onion chopped
  • 1 pt
    grape tomatoes chopped
  • 1/8 - 1/4 tsp
    cayenne pepper
  • 1
    pinch salt and pepper
  • 1/4 tsp
    cumin
  • 3 Tbsp
    lime juice
  • 1
    clove chopped garlic
  • 1
    if desired-chopped green chili pepper or jalapeno pepper
  • 4 Tbsp
    butter or oil for frying
  • 1
    can of black beans if desired
  • 6-8 oz
    shredded mexican cheese or cheddar
  • 4
    eggs
  • 2-4
    taco salad shells baked
  • handful chopped cilantro if desired

How To Make mexican eggs ( huevos rancheros)

  • 1
    heat butter in pan. Cook the onions and garlic until softened. Add the green pepper,cumin,and Cayenne pepper,and green chili's if desired. Cook until done.

    Add the tomatoes,and ( beans if desired) Add the lime juice salt and pepper to taste. Bring to a boil.

    spread Tomato mixture in a large baking pan,or dish. Make 4 wells in mixture. Crack eggs and place in each well.

    place in 375 degree oven. Bake until eggs are cooked. Sprinkle with cheese. Place back in oven until cheese melts.

    place mixture with 1- 2 eggs in each tortilla shell. Sprinkle with chopped Cilantro,and Serve!
