This is a Mexican Breakfast dish. I tweaked a recipe found in a cook book. It is full of the fresh Veggies,and a little spicy. Enjoy!

Ingredients

  • 1 - bell pepper chopped
  • 1 - onion chopped
  • 1 pint grape tomatoes chopped
  • 1/8 - 1/4 teaspoon cayenne pepper
  • 1 - pinch salt and pepper
  • 1/4 teaspoon cumin
  • 3 tablespoons lime juice
  • 1 - clove chopped garlic
  • 1 - if desired-chopped green chili pepper or jalapeno pepper
  • 4 tablespoons butter or oil for frying
  • 1 - can of black beans if desired
  • 6-8 ounces shredded mexican cheese or cheddar
  • 4 - eggs
  • 2-4 - taco salad shells baked
  • - handful chopped cilantro if desired

How To Make mexican eggs ( huevos rancheros)

  • Step 1
    heat butter in pan. Cook the onions and garlic until softened. Add the green pepper,cumin,and Cayenne pepper,and green chili's if desired. Cook until done.
  • Step 2
    Add the tomatoes,and ( beans if desired) Add the lime juice salt and pepper to taste. Bring to a boil.
  • Step 3
    spread Tomato mixture in a large baking pan,or dish. Make 4 wells in mixture. Crack eggs and place in each well.
  • Step 4
    place in 375 degree oven. Bake until eggs are cooked. Sprinkle with cheese. Place back in oven until cheese melts.
  • Step 5
    place mixture with 1- 2 eggs in each tortilla shell. Sprinkle with chopped Cilantro,and Serve!
