Ingredients
- 1 package frozen broccoli florets (10-16 ounces)
- 1 medium onion
- 2 cups sliced mushrooms
- 4 large egg whites (or 2 cups egg substitute)
- 1 large egg (optional)
- 2 cups skim milk
- 1/2 cup grated cheese, parmesan or swiss or your favorite
- 1/2 teaspoon garlic powder
- 1/2 teaspoon italian seasoning
How To Make diabetic friendly quiche (sallye)

Step 1Preheat oven to 375º F Pour broccoli into colander and allow to thaw and drain Finely dice onion and slice mushrooms Place broccoli, onion and mushrooms in microwave safe bowl and zap for 3 minutes (do not add any liquid)

Step 2Remove bowl from microwave and allow veggies to cool down Add eggs and milk to bowl and whisk until all ingredients are well blended Fold in cheese and seasonings

Step 3Transfer to quiche or baking pan and place in preheated oven. Cook for 40-45 minutes until firm in center Remove from oven and allow to set for 5-10 minutes to settle.
