A great way to spend time with the family and make breakfast without standing over a stove. I always mess up the first pancake, but not this way!

If you need an easy breakfast to meal prep or serve a family, make a batch of these baked blueberry pancakes. It's everything you love about pancakes, only less messy, and you won't burn the first batch. With bits of blueberries in each bite, each slice is light and moist and almost tastes like a cake. You can substitute any fruit you'd like. We really enjoyed that the edges got a little crisp.

Ingredients

  • 2 cups pancake mix
  • 1 1/2 cups fat-free milk
  • 1 large egg
  • 1 tablespoon oil
  • 1 teaspoon ground cinnamon
  • 1 cup blueberries

How To Make baked blueberry pancakes

  • Combine pancake mix, milk, egg, oil, and ground cinnamon.
    Step 1
    Preheat the oven to 400 degrees F. In a large bowl, combine all ingredients, except berries, until just blended.
  • Mix; the batter will be lumpy.
    Step 2
    The batter will be lumpy.
  • Fold in the blueberries.
    Step 3
    Fold in the blueberries.
  • Spread into a greased baking pan.
    Step 4
    Spread into a greased 15 x 10" baking pan.
  • Bake for 10 minutes or until golden brown.

    Bake at 400 degrees for 10-12 minutes or until golden.
  • A platter of Baked Blueberry Pancakes.
    Step 6
    Serve with butter and/or syrup.
