Zucchini Walnut Bread

Mmmm Mmmmm. This is my favorite kind of sweet bread. In my book it far exceeds that old banana bread by a mile. But, of course, I don't really like banana bread so I'm pretty much prejudiced!! LOL

I got this one in either the 70's or 80's and am adding raisins to match the picture I found of the, otherwise, exact same recipe that I have. I think the raisins would be a good addition but you can leave them out without consequence. LOL

You can also bake them in a muffin pan if you like!!

brown sugar, packed firm
3/4 c
3 c
unsifted flour
1 1/2 tsp
baking soda
3/4 tsp
baking powder
3/4 tsp
2 tsp
2 c
grated zucchini, unpeeled
1 c
coarsely chopped walnuts
1 c
1 tsp

How to Make Zucchini Walnut Bread


  • 1Cream butter and sugar, add beaten eggs, continue to beat until smooth
  • 2combine dry ingredients and add to egg alternately with zucchini
  • 3stir in walnuts and vanilla
  • 4Turn into greased and floured 9-inch tube pan
  • 5Bake 350 F 50 min
  • 6Let stand 10 min, turn out, cool

    Makes one loaf
