zucchini walnut bread
Mmmm Mmmmm. This is my favorite kind of sweet bread. In my book it far exceeds that old banana bread by a mile. But, of course, I don't really like banana bread so I'm pretty much prejudiced!! LOL I got this one in either the 70's or 80's and am adding raisins to match the picture I found of the, otherwise, exact same recipe that I have. I think the raisins would be a good addition but you can leave them out without consequence. LOL You can also bake them in a muffin pan if you like!!

Ingredients
- 4 - whole eggs, beaten
- 1 1/2 cups brown sugar, packed firm
- 3/4 cup butter
- 3 cups unsifted flour
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon baking powder
- 3/4 teaspoon salt
- 2 teaspoons cinnamon
- 2 cups grated zucchini, unpeeled
- 1 cup coarsely chopped walnuts
- 1 cup raisins
- 1 teaspoon vanilla
How To Make zucchini walnut bread

Step 1Cream butter and sugar, add beaten eggs, continue to beat until smooth

Step 2combine dry ingredients and add to egg alternately with zucchini

Step 3stir in walnuts and vanilla

Step 4Turn into greased and floured 9-inch tube pan

Step 5Bake 350 F 50 min

Step 6Let stand 10 min, turn out, cool Makes one loaf
