Zucchini Walnut Bread

I got this one in either the 70's or 80's and am adding raisins to match the picture I found of the, otherwise, exact same recipe that I have. I think the raisins would be a good addition but you can leave them out without consequence. LOL
You can also bake them in a muffin pan if you like!!

Ingredients

4whole eggs, beaten

1 1/2 cbrown sugar, packed firm

3/4 cbutter

3 cunsifted flour

1 1/2 tspbaking soda

3/4 tspbaking powder

3/4 tspsalt

2 tspcinnamon
-
2 cgrated zucchini, unpeeled

1 ccoarsely chopped walnuts

1 craisins
-
1 tspvanilla
How to Make Zucchini Walnut Bread
- Cream butter and sugar, add beaten eggs, continue to beat until smooth
- combine dry ingredients and add to egg alternately with zucchini
- stir in walnuts and vanilla
- Turn into greased and floured 9-inch tube pan
- Bake 350 F 50 min
- Let stand 10 min, turn out, cool
Makes one loaf
